I guess that depends on your comfort level applying resin. If you do all the layers together, on a dry hull, you will need more resin to get the job done.
But you may use less in the long run. If your epoxy uses a slower hardner you will have more time .

It certainly saves time to do all layers at once, but make sure you have time to sqeegie properly.
