Gluing between the wires and removing the wires is called tabbing. An archive search will give you hours of reading. Really not much to it and it has been well covered in this thread already. But I still can't resist throwing in two more cents:

The trick I use to filling holes on S&Gs is to mask the outside of the seam between stitches and glue between the stitches from the inside with loosely thickened epoxy (less than mayo thick but more than honey thick) so it flows through the crack to the tape. Use only enough to glue the seam, no fillet yet.

After cured remove the wires and mask the remaining portions of the seam and the holes and complete gluing the seam with the loosely thickened epoxy. At the same time make the full fillet using a radiused strike-off tool (tongue depressor) and let it set until rubbery (a couple hours). Then apply the glass tape with unthickened epoxy.

The holes will fill without wetting the outside plywood and without drips on the outside to sand off. The fillets will be nice and even without the finger/brush/spatula dents.
