Lot's of responses to your inquiry...our friends are most helpful! Key take aways for me are:
Taller is better, but relative to builder "and" design. Shorter builder with a very "big" design equals less height on the strong back...taller builder "smaller" design means more height will be needed.

Stepping up to work down on a project is easier than adding shims to raise the project up to you.

You'll be up and down all over the boat as you work and sight and work more. Knee pads might be in order.

Wheels are a good idea, if you can secure the piece down when you need stability. I think it's always better to sand out doors, no matter what the weather (unless there's precipitation).

Making a kayak, you will eventually need someplace to work the deck and hold the hull and vice-a-verse-a. It might be helpful to make your work stand (not the strong back mind you) higher so you can get under the structure and poke your head up through the cockpit and hatch openings. This feature is very useful when filletting spacer pieces and hatch "flanges" inside the deck, and glassing these, once the deck and hull are joined...if you install them after the deck and hull are joined (some cut out their hatches before the deck is attatched to the hull).

Being a woodworker, you've an innate understanding of "set up". Ahh, to have the perfect shop...
