I haven't used Port-oxford cedar so can't help you there. Regarding instructions and sizing information you may wish to take a look at the Greenland paddle making resources on the Qajaq USA site at http://www.qajaqusa.org/Equipment/equipment.htm#paddlemaking. Of particular interest is Chuck Holst's paddle plans and the "paddle poll" that will give you an idea of common paddle sizes.
