I would start right in. I assume your work space is heated - at least when you're working. The 1/4" thick strips will dry very fast and won't be able to exert any forces that will give you problems. especially considering that you probbly will only do a few strips per work session. Keep all you strips in the heated area.
Plus cedar is quite stable unlike hard woods like oak.
