Hopefully the skninboat gurus will catch anything I miss...
There are a number of very good books out there for skin boats:
Building Skin-on-Frame Boats -Robert Morris
Has instructions for 5-6 kayaks, 2 canoes, and two boats
Building the Greenland Kayak - Chris Cunningham
Instructions for a Greenland Kayak and a wealth of information on accessories and techniques
Wood and Canvas Kayak Bulding - George Putz
Instructions for two non-traditional kayaks
The Aleutian Kayak - Wolfgang Brinck
Instructions for ane Aleut Baidarka - I have heard this is out of print.
Any of the books above have everything you need to build the kayak, no plans needed.
An Aleut Baidarka from Brinck's book was my first kayak (finished a few months ago), if you've built two Guillemots in a year, you won't have any problems with a SOF.
Don't have a really good comment as far as time. Mine took nine months or so, interspersed with going back to school, holidays, etc... I would confidently say that it will take less time than a stripper though...
