I've build one Canoe with B&C and one kayak deck mostly Bead and cove, but with some beveled pieces, so not alot of experince to draw from. A few thoughts from what I've personally seen.
I tended to over bevel a bit, leaving a 'Vee' on the inside corner. the outside had a nice joint. This in my mind would be enough reason to not use it on a canoe, as the inside is right in view. I assume you are building a kayak, so it should not be an issue for you.
When I cut out my cockpit, I dropped the cutting on the ground at on point. It broke. right along one of the bevels. I then deliberatly broke it, just flexing int in my hands. again, broke on the remaining bevel. The bead and coves held better. this was done prior to glassing, I'm confident it would not be an issue once glassed.
There is a radiusing tool you can buy for a few dollars that will make a nice bead edge when you have to do it manually to fit ends, and cheater strips in. works well. Cutting a cove for these strips I use a bastard file, which does not require alot of skill, but takes time.
I personally believe I do a better job with Bead and cove, as long as the planks are seated properly together. But I've very little experince with the bevel.
