Myrl beat me to the punch. After using B&C for the hull, I switched to bevels for the deck. It was easy to get good tight joints - on the outside. But on the underside of the deck, lots of my bevel joints had open "vee's". Not critical with a kayak, but I plan to build a canoe eventually, and I will definitely use B&C strips, for the visible interior.
With B&C, there are plenty of folks on either side of the "bead up" vs "cove up" debate. I like to strip with the bead up. The cove still makes a handy trough for glue, with the use of a simple jig that takes 3 minutes to make. And clamping the strips is quick, with no worries about damaging the cove edges.
