You may want to consider a solo canoe built on the lines of a Rushton double paddle canoe. They are closely related to decked kayaks but without the deck. The paddler sits low in the hull on a bottom seat like a kayak and uses a double paddle like a kayaker. The advantage would be that entry and exit would be much easier and he wouldn't have to worry about getting trapped in a cockpit. There are a number of designs to look at on the internet. I am going to be buying one of Rob Mack's plans from Laughing Loon and building it before next spring.
