You forgot:

- Mark Starr's book "Building a Greenland Kayak"

I think this is one of the best beginner's guides.

- H. C. Petersen's two books "Instructions in Kayak Building" and "Skinboats of Greenland.

These two books provide more insight into traditional method than Morris, Cunningham or Starr.

- There's also David Zimmerly's book "Qajaq", which is about Alaskan and Siberian boats.

- Bob Boucher has a videotape of the kayak building process. I'm not enamored of some of his methods, but the tape is a good resource.
