You never want to compromise chine strength. I haven't tried not glassing the inner hull but I am sure that using tapes instead of glass you'd do well. I would ahve to say that without glass on both sides the kayak would be a little more prone to rock damage but if you don't have that worry (I do, big time) then it shouldn't be a problem.
