Information is in danish, but the pictures are quite clear. Here they are using canvas and filling it with ribs and wood slats. One of the early pictures shows the football-shape area formed by the gunwales when it is suspended and the fabric is hanging in a distintc canoe shape, before any ribs or slats are added. You would use a heavy glass cloth and cover it with polyester resin -- and maybe add some ribs.
