I have stripped the hull and decks of my expedition single. I did a combo of joining methods for the strips at center line at the bow and stern. I mostly ended up doing what you are doing.
I also over hung some strips too and the bow and stern initially looked ragged and a bit ugly. But I was half sure things would trim up ok.
Well, after a break from building, this morning I pulled the staples around my bow and stern, trimmed with a saw, crunched with my plane and then used a belt sander.
I am happy to report that apart from being a bit thick (1/2" flat) the bow and stern now look beautifull and will soon be ready for the hardwood 'capping' keel piece which will really tidy things up nicely.
At this stage I figure I can shape the 'capping' keel piece to a rounded sharp-ish edge. But it won't be razor sharp. But then a nice 1/4" round is what I really want for glassing. So things seem to be on track for me.
Sounds like you are doing just fine.
