You might want to remember that plywood lapstrake construction is very different from traditional lapstrake construction. With plywood, lapstraking becomes a much more simple process, much closer to stitch and glue than traditional lapstrake. It still isn't the easiest of construction methods, but it can create wonderful hull shapes at relatively low cost and weight.
I agree that it isn't really that applicable to stripbuilding, but I think a kayak could be easily made with this method.
