I built strip canoe curing and sanding between each coat. And I built two S&G kayaks by seal coating, glassing and applying three fill coats in 24 hours. I much prefer to let the fill coat flypaper cure (sticky but does not come off on your finger) and then apply another seal coat. As long as I don't have drips and junk stuck in the epoxy I see no need to stop, cure and sand between coats I use Raka epoxy in SoCal weather (warm and dry) and have only seen light blush after several days of cure.
