Here's a link to Timson Marine, who has the plans for the Ocean Pointer. The method of building is different somewhat than the strip/sheathed methods that are used for the kayaks. This hull, I think, is not sheathed outside.

The book I mentioned earlier does have some typical scantlings for both strip and cold moulding. There is a lot of good information in there. The Gougeon book is also very good. The best thing would be for you to seacrch for an exsisting plans set developed for the method that you desire, or to work with a designer to modify a design you like for the methods that you prefer.
Paul Fisher is very willing to do this sort of thing with most any of his designs. Also, Tony Dias has a lot of nice bigger boats. He is familiar with and utilizes the modern strip sheathed methods a lot.

The pictured example is from Dias. It can be done in foam core or strip composite construction. She is a modern adaptation of a Buzzard's Bay 25. About 30 feet on deck, and is said to be trailerable (routinely trailering a 30 footer........that is a lot of boat!!!).
