David, I second Paul's recommendations. I'm currently awaiting delivery of PVC Vinyl (18oz/yrd) I bought from Mauritzon (800-621-4352) for a Tom Yost designed Sea Pup currently framed in my garage. I bought 6 yards (5 feet wide) for ~$30. There are many sources for this fabric and in many colors. If you use Mauritzon, ask for Rick.
I also recommend you check the archives for posts by Steve Phillips. He did a group build (4 kayaks) using PVC Vinyl and had some very good points. He posted a web site he is building documenting his effort.
