Brian, check the link below. There are two plans for sale for folding kayaks at that site. My wife bought me plans for the 15' Roomy open double for my birthday but it is not a folding kayak. At least if you have another set of plans you can make modifications as necessary.

I noticed in the set of photos that you posted the person building the child's sized folding yak is using 3/4" plywood. That may be overkill, and I highly do not recommend plywood for the stringers.
