I built a Return expressly for 2 week solo trips and found it handled it well. I built my King with the idea it would be my "day" boat since I thought it was smaller. I haven't done any two week trips, but I've done one week trips including 6 gallon of water without ANY deck load. I'm confident I could do two week trips in the King. I just came off a 4 day, cold weather trip, including water and had to get creative to fill the space so stuff didn't shift.

Mine is built with the roller's recess, day hatch (wonderful!) including hydration bladder tube port, and CF cockpit coaming with thigh braces. My hatches are both larger than the plans show, reinforced with CF hatch cover retention frames.
