Here are a few comments from someone who builds racing kayaks for a living.
We have been forced to compete with extreamly low cost boats from Eastern Europe and have been looking for ways to make a lower cost/priced model. We experimented this fall with Vinylester in our infusion kayak in an attempt to both reduce the materal and labor costs. Many racers below the elite level can't afford a pre-preg epoxy boat. The even though we wern't doing an open/wet layup the vinylester stunk up the shop so much we had to wear resperators for 3 days after it came out of the mold. I wouldn't recomend it for a home builder.
In terms curing epoxy, the procedure varies on the brand and mix you are using. Most epoxies discussed on this board cure at room tempurature but can benefit from a post cure of 3-6 hours at 150 degrees F. Can actually do this with some 100 watt lights in a cardboard box around your boat. Just be careful of lights touching the cardboard and starting a fire.
