I've done it both ways and it works exactly the same, effects the bending of the wood very little if any. Doesn't look anywhere near as nice on a stripper though. Still I see no reason for scarfing strips for a stripper, the wood is a core material, doesn't need the strength. Butt joints work fine and are a heck of alot easier to make.
