The trick to beveling is to just lightly over bevel the edge so the outside corner of the strips touch and any slight gap is on the inside of the hull. The PVA glue should fill the small gaps. Then when you wet the cedar with epoxy it will fill any voids the PVA glue may have missed. Your edge-to-edge bond will be stronger than the wood with either bevels or bead and cove. Wood thickness and glass cloth weight will determine the stiffness and strength of the panel not the edge fit-up method.
