Hi Joe,
For all the mahogany runabouts I've ever seen, none used holly for the white strips. That process is very common with teak for the soles (cabin floors) of most sailboats and some powerboats.
Orriginally the decks on the runabouts were planked with fairly narrow strips and used a rubber based caulk between the planks to seal them and make the deck waterproof, they started out with black caulk btw. Later on boats used wider planks with fake grooves cut into them to mimic narrow planked decks and eventually went to a white caulk as it was more showy and set off the wood better.
The last runabout I did for a customer was 27' long and 10' wide all with seamed planking down the deck, fun job .
