The magic words here are "clamp time. Hide glue gives a good joint when used in thin, tightly-clamped joints. It has been used fo centuries for creating wood panels by edge gluing jointed (edges planed square) boards. But these boards first had to be machined to have tightly fitted edges, and they had to be clamped under even pressure until the glue had hardened. This suggests to me that the material did not have very good gap-filling properties.

In "conventional" wood strip construction the strips are stapled to the forms, and there is little or no pressure forcing them against the adjoining strips. With "stapleless" construction techniques there is more pressure used to hold the strips together, but this is usually pressure in the range of rubberbands or bungee cords, not that which you would get from a metal clamp. Go stapleless and use enough clamps and I think the stuff would work fine--but I don't think it would be fast work, and I think it would be messier.
