I use 2 layers of 3mm ply rings (heresy I know) to create my lips. I add them after the hull and deck are joined. They to not require glass taping at all. Just glue them in. I do it in two stages. First I laminate the two layers by clamping them in place while the glue sets. Then I remove them and sand them up so that they have nice soft edges, Seal the bottoms with epoxy and then glue them in place again for good. Using one layer as a spacer is optional. Easier and quicker than strips and less fiddling with glass cloth.
Second question. I find a layer of 3mm smoothskin neoprene glued under the lid works like a charm.
It is difficult to get here though in small quantities.
