I had similar requirements and chose to build Nick's Night Heron. Give it a close look. I went with a hybrid but I believe it is available in a full strip version too.

I'll be laying glass on the deck this weekend. So far it's really good looking boat but it will be a few weeks before I can tell you how it paddles.
