Kayaks don't HAVE to built out of cedar. Cedar is traditional but it's not the only option. Spruce and fir will work. Being in SC take a look at southern cypress. It's fairly light in weight and rot resistant. Heck I just a sea kayak out of mahogany. Don't get hung up on having to use cedar...
