It just dawned on me where you are, not far from where I spent my summers playing with boats when I was growing up...um....a really long time ago

With the availability of wood now days, I'd search for what you can find that's relatively clear at a reasonable cost. You can always buy perfectly clear wood but it's not always realistic in cost. I'd also not worry too much about strip widths, unless the designer calls for something special, though those are usually narrower or thinner than usual. Wider strips just go faster, otherwise makes no difference, cept to me the wider flats they cause make getting a nice rounded shape when your fairing more difficult.
