I used 60 grit on my ROS for the initial fairing and thought it worked very well (and it was fast). I agree that you need the right tool for the right job. For example, I have an accent strip of walnut and I found that a plane was the best way to take small shavings off, rather than sanding. Of course the only reason I needed to do that was because for whatever reason the walnut turned out to be slightly thicker than the cedar. Oh, and with some of the flat grain I had a cabinet scraper worked very well. The scraper wasn't really used for fairing though.
