Some birds have excelent sence of smell, but most don't. Vultures for instance can smell a carion from many miles away. Seagulls have good scent as well. Great Horned Owls on the other hand... they are the only natural predator of skunks.
How do they find bird feeders? Ever notice how birds pick up everything with their beaks... Eventually they get lucky and find your feeder, then their buddies and enemies join in. Thats my guess.
But I agree that its not an issue making houses out of cedar. Lowes sells a bunch of cedar houses.
