I did this on one of my kayaks. For the risers over the thigh hooks, I just glued them to surface of the glassed recess. This doesn't replicate the geometries of your NDK cockpit (with the deeper lip at the knee hooks), but the effect is about the same. This wasn't my idea, but I don't recall who first posted this technique. It was certainly someone on this forum.

This picture was taken before the hull and deck were attached (you can see the packing tape holding the hull at the proper width).
