Paper-backed veneers are usually used in cabinet-making by people who don't have a vacuum press, because you can use contact adhesive to attach them. I don't know how they'd work for cold molding, but if you're looking for non-backed veneers check out Certainly Wood. It's mostly decorative veneer, but it's all raw. The veneer you'd use for cabinet-making is incredibly thin, you'd need way too many layers to make it viable, and it usually comes in small-ish sheets. Have you checked some of the suppliers who advertise in Wooden Boat? Do you have any local marine suppliers?
