Skin-on-Frame: coating plywood frames (Yost stylee)

Just wondering if people have used polyurethane to coat the plywood frames in Yost style wooden SOF. Epoxy might be more waterproof but it is a lot more expensive and a bit more difficult to work with. I think it's not a bad idea to coat the chines/stringers/keel with polyurethane as well?
