I'm currently building a Bear Mountain Enterprise that is done exactly like the way you've described. I haven't got the greatest photos of the cockpit opening (haven't needed to take one yet) but you can see in the photo below that the thigh supports are cut as a part of the coaming. I'll take some photos showing the parts that make up the coaming (which will make the building process clear) and post them here the next time I'm working on the boat. I think it's a good way of making integrated thigh pads.
