I agree, I made a strip deck on a S&G hull and it was a bit too "round". If you flatten the top a bit , I think you will get the look you're after.

You could mock up a form with an elliptical shape and lay a few strips on it to see if you liked it..

BTW I'm enjoying reading your design and build.
