I had for a number of years a strip sea kayak design with medium height deck (approx 26 cm) and a large cockpit. With carefully fitted wings I did eventually hit a working compromise: good support for rolling without splayed knees, getting in and out quick and easy, one leg at the time - and could work the knees competition style in spite of the low deck. The hip rotation made it easy to alternate the knees in the narrow gap between the wings - together with a very comfortable position when rolling (wings low and comfortable). It took some time with the wings temporarily attached with c-clamps or tape to find this happy compromise.

Since then I have moved to small Greenland style cockpits and extremely low decks (20-21 cm), and as Bill mentions it works just as fine, but with a completely different technique for powering the strokes.
