: I rescued a stitch and glue kayak from someone who abandoned the project over

With a S&G you need a glass strip to hold the hull halves together, it's not a keel strip in the conventional sense like on a glass hull for protection only.
So if you remove the strip, specially if the tie wires have been removed, the hull will fall apart.
