What I find neat is that a 3D shape can be defined by stitching 2D panels together. It's a pretty cool trick once you figure out how to get the 2D panel shapes. Pretty quick and efficient, too. Some boats are real beauties. So to me it's not all commerce.

The fact that an industry was built around it means something though. Anybody, experienced or beginner, can build a beautiful wooden kayak from a complete kit. Since strippers require a lot of manual work, that industry is limited to plans usually (maybe I'm wrong).

What is "superior" depends on what you want. Strippers are usually the best looking boats, often pieces of art, and don't have a hard chine limitation.
