I used green White Ash for the ribs and coaming on my SOF and the ribs turned out fine using the steamer, but the coaming would start to split, when using the steamer, as soon as it started to cool down, while bending around the coaming form. I had much better results by just soaking the coaming stock for a few days in water and bending slowly around the form, using a backing strap. Like others have said, you'll probably have to try a few different ways to see what will work best for you.
