it makes sense to use techniques applicable to the kayak you have. The skin lets you know when you aren't on a strong point. With hard boats there really isn't a definable spot on a slippery hull,,and if there isn't a strong point,,crunch. Since it's so easy to make the rigid panel rigid enough it makes more sense than making it breakable enough for common use.
