If you don't allow sufficient cure time between coats, you'll end up with a soft finish that will take forever to cure. Varnish (polyurethane is just a type of varnish) needs oxygen to cure (it doesn't "dry"). If you re-coat it before it's had sufficient time to cure, you'll just be sealing it off from the oxygen it needs, which dramatically increases the curing time of the coat underneath. Repeat this enough times and you can end up with a finish that will take months to fully cure.
