Any yellow carpenters (PVA) glue is fine.
Your beveled strips will look like a Stratavarious. You think doing a "V" shape pointed end on cove and bead is easy? I've done both ways and I think beveling is easy and fun and believe me, I've seen plenty of 1st time boats and they often come out spectacular. Cove and bead on a canoe is easy since you are just stacking up strips. Kayaks have sharp shear corners, long pointed ends and a different front and back deck profiles which complicate things. C & B is not a skill-less building method with kayaks.
