I have spent many hours canoeing with a large dog and cannot imagine managing anything but the most mellow and well behaved dog in a kayak. Those that I have seen do it had a large double or triple, with the dog in front so they can seen. Having the dog behind you is troublesome, especially since it wants to see ahead. It lurches from one side to the other trying to see around your back and you cannot anticipate it's movements. I think a canoe or a partially decked kayak would be much better.
