Hi Kyle - I just completed a SOF that was designed entirely for rolling. I'm sure you could scull it, too
I did post a pic and a write-up a couple of days ago. It's a Yost designed "Sea Rover, which he designed for smaller paddlers, to roll.

Yost style non-traditional SOF kayaks - when built as non-folding wood framed boats - are very, very quick and inexpensive boats to build. Like less than a month of part time work, and often for less than $200 in materials. This latest one I've built weighs just twenty something pounds.

If you live near Bellingham, WA you could take mine out for a spin.

There are other designs out there for low volume Greenland style boats - ask on the qajaq usa forum. Or take a gander at Chris Cunningham's book ("Building the Greenland Kayak"), which has a bit to say about building a lower volume rolling kayak.

There's always the oooold Dagger "Blast" too, for the plastic option - they were a great little boat to roll.
