Usually you should not sand so much of epoxy. Hull should be quite smooth before epoxing and glassing and should be still smooth afterwards. You can ofcourse use the epoxy as a fairing compound. If you have non-glassed surfaces remember to coat it well and then do not sand the epoxy away, just scrub it. If you have surface which you will glass, no precoating is needed before glassing.
So - in short - sanded epoxy will not protect the wood, you'll need the epoxy layer on the wood.

: After putting on 3 filler coats of epoxy on the hull which it needed, I spent
: 2 hrs sanding the hull smooth again getting rid of all the lumps &
: bumps etc. When I had finished it was time for a clean up which I do after
: every stage. I put the sweepings & the contents of 2 sander bags into
: a plastic bag & I was surprised at how much there was, so I decided to
: weigh it, just over 0.43kg (0.95lb) & that was all epoxy dust from
: this one session.
