Material: Varnish - 1200 too fine a grit between coats?

Is 1200 grit wet sandpaper too fine a grit for sanding between coats of varnish? I'm thinking the finer the grit, the less of the previous coat I take off, so that would be more varnish on the boat for UV protection, but maybe it doesn't give enough "tooth" for the next coat?
