You might want to start by looking at the Mill Creek family of boats from Chesapeake Light Craft.

You should also consider the Great Auk design family of boats from the host of this most excellent forum, Nick Schade/Guillemot Kayaks. You'll also see these on the CLC page I linked above.

These are strip-built designs, so the builds will be more time-intensive. If that's an issue for you, check into plywood stitch-and-glue (S&G) designs, which also produce pretty boats.
