Epoxy loves heat. If you want to have a transparent glass lay-up you need to have the warmest place possible. Forget what the epoxy makers say about low temperature curing epoxy. IT'S NOT For glass wet-out!
That said spend the extra for a thin viscosity "wet-out" resin, like System Three's "Clear Coat".
Still for the all the work you're putting into this boat I suggest it's worth having a warm place. Married? Send the wife off to mothers for the weekend and glass in the living room. Got a friend with a warm place?
Does the sun ever shine there? Make a lean-to of plastic on the south side of the house and wait for a sunny day.
Don't be in a hurry. You may be looking at this boat for many years to come, so think, plan, and do your best.
