Hi Peter,
Gunwale thickness varies with builder. Some are 5/8 inch thick. If the taper on theends are the same on both boards it shouldn't matter too much, just take care with any rib mortices. The vertical dimension is more important.
And you're 'adding' wood to the ends with the stem pieces.
