After looking at everyone else's posts (yeah I know a first for me ), I'd give some thought to a conestoga style top covered in coverlite. Frames could be made from electrical conduit at the front and rear (not all that hard to bend) and the sides then would just roll up. Would take some bracing to keep the structure reasonably rigid, but shouldn't be that hard with the tree's in the center offering support. Then the top would be round and would help to shed wind loads.
Just a thought.
